Blueberry Syrup

Simple syrup from hand-picked local blueberries. Dangerous over vanilla ice cream.

Ingredients

  • 6 cup Fresh Blueberries
  • 4 cup Water
  • 2 cup Sugar
  • 3 tbsp Lemon Juice
  • 2 tsp Vanilla Extract

Directions

  1. Add the blueberries, water, and sugar to a large pot.
  2. Stir on low/medium heat until the sugar is dissolved.
  3. Turn the heat up and bring it to a boil.
  4. Let it boil for a minute while stirring, then turn it down to a simmer.
  5. Cook until the liquid reduces and the syrup reaches your desired consistency.
  6. Remove the pot from the heat, then immediately pour in the lemon juice and vanilla and stir really well. — Add these off the heat - cooking heat degrades the flavor and purpose of both

Notes

Jar it and store it in the refrigerator for up to 2-3 weeks.
Enjoy it drizzled over some vanilla ice cream
