Blueberry Cobbler

Made with the frozen blueberries we picked last year – supper simple, and it doesn’t need many ingredients.

Filling

Ingredients

  • 2 cup Blueberries
  • 1/4 cup Sugar
  • 1 tbsp Vanilla Extract
  • 2 tsp Lemon Juice

Directions

  1. Pour blueberries in a medium-sized bowl, sprinkle with sugar and gently stir.
  2. Let the blueberries sit for a couple of hours to thaw and to combine with the sugar.
  3. Add the blueberries, vanilla, and lemon juice to a medium-sized sauce pan, and bring to a gentle boil, giving it a good stir occasionally.
  4. Lower the heat to bring the blueberries to a simmer, and preheat your oven.
  5. While the Blueberries are simmering, begin mixing the cobbler batter, but remember to stir your blueberries occasionally
  6. Remove the blueberries from the heat and let them cool for a few minutes.

Batter

Ingredients

  • Flour
  • Sugar
  • 2 tsp Baking Powder
  • 1 Salt
  • 3/4 Milk

Directions

  1. Mix all of the ingredients into a nice batter.
  2. Pour your blueberry filling into your baking dish.
  3. Gently pour your batter over your blueberries making sure to cover the pan. — The batter will go in between your blueberries, exposing them.
  4. Put in the oven and bake for approximately 22 minutes, or until the batter has firmed and is golden, brown in color.
  5. Let it cool before serving.
