Mini Peach Cobbler Muffins

Peach cobbler is one of the great Southern comforts, but it demands a bowl, a spoon, and sitting still — three things in short supply around here. These mini cobbler muffins fix that: each muffin cup gets its own little pool of melted butter, then the batter and peaches go in, and out comes cobbler you can hold in one hand.

They’re the size that makes a kid feel like they got their own dessert, and the size that makes a grown-up take three. I’m not judging. I’m the grown-up.

A note on the peaches: these are made with canned peaches straight from the pantry, and that’s on purpose — it means cobbler muffins can happen any month of the year, no waiting on the season. Now, we do get fresh ones. Every summer there’s a man who sets up on the side of our local highway selling South Carolina peaches by the case, along with whatever else is in season, and it’s hard to drive past without stopping. Some of those get eaten straight out of the box no matter how hard I fight the kids off — but most of the case gets processed into one thing or another around here: peach butter, Datil Peach ‘Em sauce, Reapin’ Peach Sauce. The canned ones are for baking. The case peaches have bigger plans.
